After harvesting, Sean typically waits 24 hours before fermenting.\u00a0 Although his wine-peers think he&#8217;s crazy, he tells them that he&#8217;s merely being guided by <a href=\"http:\/\/www.wine-maker.net\/LibraryIndexPage.html\" target=\"_blank\">his collection of old and ancient texts relating to wine<\/a>.\u00a0 You can read more about this art-dealer-turned master vigneron <a href=\"http:\/\/www.gangofpour.com\/bree\/profiles\/thackrey\/index.html\" target=\"_blank\">here<\/a>. I also recommend spending some time on <a href=\"http:\/\/www.wine-maker.net\/\" target=\"_blank\">Sean Thackrey&#8217;s website<\/a>, which is very unique.<!--more--><\/p>\n<p style=\"text-align: left;\">Tonight I had the opportunity to taste his 8th vintage of his &#8220;base&#8221; wine, the Pleiades VIII.\u00a0 Bottled in July of 1999, this Old Vine wine includes Syrah, Carignane, Zinfandel, Petite Syrah and Merlot (to name but a few). The grape mix varies from vintage (or edition) to vintage on this non-vintage wine. It&#8217;s very difficult to find technical details about Sean&#8217;s wine&#8217;s, but from my tasting I can confirm that he uses some oak and most likely spontaneously ferments his wines using indigenous yeasts.<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/vinosseur.com\/wp-content\/uploads\/2009\/12\/2009-12-02_22009049.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-medium wp-image-2365\" title=\"2009-12-02_22009049\" src=\"http:\/\/vinosseur.com\/wp-content\/uploads\/2009\/12\/2009-12-02_22009049-300x225.jpg\" alt=\"2009-12-02_22009049\" width=\"300\" height=\"225\" \/><\/a><strong>Date tasted:\u00a0 Wednesday December 2nd, 2009 at 23:00<\/strong><\/p>\n<p><strong>Appearance:<\/strong> Lightish brick-red with a slightly brown edge. Development showing. Dim lighting so I couldn\u2019t note the intensity. Unfiltered with notable sediment.<\/p>\n<p><strong>Nose:<\/strong> A wine with high intensity and a smoky nose with slight balsamic-like hints. Animal and barnyard aromas with hints of wet tobacco. Aromatic herbs, tiger balm, cranberry, dried Asian plums (the kind you find convered in a redish-orange powder).\u00a0 Smells spontaneous (fermentation). Rose pedals. As the wine remained in the glass for 10 or 15 minutes, the nose tightened up and became a bit more focused.\u00a0 A very interesting,\u00a0 fresh bouquet.<\/p>\n<p><strong>Palate:<\/strong> Juicy with ripe, medium acidity.\u00a0 Extremely mild and well-integrated alcohol (13.2%).
